Meet Mike Jenkins - Sous Chef at The Steakhouse I was originally hired at The Club in 2014 and stayed until 2018. I helped develop and open The Steakhouse, and came back this year in July! I love Flying Horse, mainly due to the “family vibes” that everyone expresses to each other. The staff here has always been great. Flying Horse is growing fast and it will be an honor to help develop and be a part of the future here. Hobbies of mine include fishing, camping, ATV riding, and spending time on my family property outside of Gunnison. I am originally from Memphis, Tennessee, and came to Colorado Springs in 1999 after joining the Army. I did 2 tours to Iraq and Kuwait after the 9/11 attacks, and got out in 2004.
